Fruitcake Preserves

 
Make a whole big pot for Holiday Gifts

 Fruitcake Preserves

 

2 cans Fruit Cocktail (1 regular and one Tropical)
1 cup Sugar
1 t Lemon Powder
1/2 cup Rum
1/4 t cake batter extract
2 dashes cinnamon 
1 t fresh grated ginger


Put everything in a pot and simmer on medium till thickened.
About 15 mins
Use a potato masher to mash the fruit. Add 
1/3 cup chopped Pecans or Walnuts
 
And pour into a jar, cool and eat.

You can make large quantities in a Instant Pot.
