Southwest Potato Salad
2 lb tri color baby potatoes
2 Hard boiled Eggs, chopped
2 T chopped pickled jalapenos
1/2 cup mayo
1/2 t smoked paprika
2 T chili seasoning
1/4 cup onion
2 T smashed roasted garlic
1/2 cup finely chopped celery
Boil the whole baby potatoes in water for 15 minutes until you can pierce them with a fork. Drain, put them in a bag and chill in the fridge till cold.
Mix all the dressing ingredients
Cut up the potatoes into bite sized pieces, place in a bowl and add the dressing and Eggs. Mix, chill then serve.
