Homemade Soft Fluffy Chicken Floss At Last!
2 giant chicken breasts (like from those Family Sized trays at Aldi)
Water
MUST HAVES
Mortar And Pestle
Boil the chicken breasts in water until cooked thru, cool to warm and then pull them apart.
Put a few shreds into a mortar and pestle and smoosh the fibers apart, keep doing it till all the chicken is done and fluffed
Mix
5 T Soy Sauce
5 Mirin
1-2 T Food grade Glycerin (to keep it soft)
2 T Coconut oil
1-2 T Soy flour (optional)
then massage into the chicken
Put into a large fry pan and put on low-1.0-1.8 and stir and flip and fluff it till dry but still moist and soft. 1-2-3 hours. Rubbing the chicken in the pan with the back of the wooden spatula breaks it into fine fibers. Wash your hands and rub the floss between your hands to fluff it up even more.
Repeat over and over till its dry but fluffy and not brittle.
Let cool on a platter and then transfer to a plastic jar and store in the fridge
