Mandelmel is a defatted almond meal, it makes baked good light and less fatty and heavy.
1 cup Mandelmel
1/2 t baking powder
big dash Cayenne
Mix all of the above in a food processor then add

1 packed cup shredded cheese
And process until it forms a ball
Remove and wrap in plastic wrap and refrigerate overnight
Line baking sheets with parchment
Remove it from fridge, dust your table with More Mandelmel and roll it out and cut into squares and bake in a preheated 375oF

If you want them Soft bake only 10 mins.
If you want them Crisp bake 13 mins
Remove from oven let cool on racks and serve
