Reduced Carb But Still Authentic Moussaka (with Vegetarian/Vegan Instructions Too)

Moussaka has potatoes in it, but potatoes are high carb foods.
So lets use thin waffle cut potato chips, instead of heavy fried thick cut potatoes.
Its still a potato and its still an AUTHENTIC ingredient.

1 Eggplant, Sliced and grilled

1 pound Ground chuck
1 (14 oz) can crushed Tomatoes
1/2 a chopped Onion
2 cloves Garlic chopped
1 T sugar
1 t cinnamon
1 T fresh chopped parsley
2 T olive oil
Salt and Pepper

Preheat oven to 350oF
Spray a square pan with Pam

Fry the onion in the olive oil until lightly browned, add the garlic and fry till fragrant. Add the chuck and fry and break up until its seared and the moisture is gone, Add the tomatoes, parsley, cinnamon and sugar and cook till it all comes together.

Turn off heat, spoon a little bit of the meat mixture onto the pan, Layer on the grilled eggplant slices, then spoon on the meat mixture.

 
 Top with a layer of
1 (1.8 oz) Bag Herrs Waffle Fried Potato Chips

3 cups Milk
1/2 cup Parm Cheese
2 Eggs
1/4 cup Flour
1/4 cup Butter
1/2 t lemon zest
1 t salt
1/2 t pepper
dash nutmeg

Whisk the eggs and milk together with a hand mixer.
Melt the butter and flour together in a pot till bubbly
Add the salt, pepper, nutmeg, and zest, then whisk in the Milk and Egg mixture while whisking fast. Stir constantly till thickened and then add the cheese till melted.

Pour over top of the potato chip layer, sprinkle with more cheese and a bit of chopped parsley.

Bake until hot and bubbly, about 40 minutes

VEGETARIAN/VEGAN INSTRUCTIONS

1 (14 oz) can crushed Tomatoes
1/2 a chopped Onion

1 T sugar
1 t cinnamon
1 T fresh chopped parsley
2 T olive oil
Salt and Pepper

Spray a square pan with Pam

Lacto Ovo Sauce
3 cups Milk
1/2 cup Parm Cheese

Vegan Sauce

3 cups Soy Milk
1 T Nutritional Yeast
1 T Besan (Chick Pea Flour)
1 t Black Salt
1/3 cup Flour
1/4 cup Margarine, Melted
1/2 t lemon zest
1 t salt
1/2 t pepper
dash nutmeg

Place all in a shaker jar and shake until smooth, pour into a pot and whisk it until its thick
Taste and adjust the seasonings.

Pour over top of the potato chip layer, sprinkle with more nutritional yeast and a bit of chopped parsley.

Bake until hot and bubbly, about minutes
