The Corny Pancakes
1 cup regular cornmeal
Toast the cornmeal in a nonstick pan, till its toasted, and fragrant, over high heat stirring constantly.
Cool on a plate, set aside
When its cooled completely, whisk it together with
1 cup flour
3 T baking powder
1 t salt
Beat the following together
1 1/2 cups milk, Room Temp
2 eggs, Room Temp
1/3 cup butter, melted
Heat a skillet, and lube it with butter, and make pancakes as normal.
I made mine in my Grillerie
Keep warm in a very low oven.

The Tomato Syrup
I made this by accident, Im candying everything, for fun. but this turned out wonderfully good, so I created this entire recipe around it.

8 Tomatoes, halved and cored
4 cups sugar
1/2 cup water
1/2 cup Apple Cider Vinegar
2 T Red Pepper Flakes (the kind for pizza)
1 T Ground Black Pepper
4 cups additional sugar
Put the sugar, water, vinegar & peppers in a pot, bring to the boil on high, then add the tomatoes, cut sides down. bring back to the boil and reduce heat to medium. Let simmer 10 minutes. Then turn off the heat and cover the tomatoes with a heavy plate or a Japanese Drop Lid. Then cover and
Set aside for 24 hours.
In 24 hours, remove the drop lid, add a cup of sugar, and let boil on medium for 5 minutes, replace the drop lid, cover and set aside 24 hours.
Along the way you can easily now, remove the tomato skins, and discard.

Then spoon the tomatoes into a sterilized jar and cover with the syrup.
Serve the pancakes with butter, chopped candied tomatoes and drizzles of the spicy syrup.
BONUS RECIPE
You will have extra syrup in the pot.
Add a half stick of butter and 1/2 cup heavy cream and let simmer on medium till it turns into thick luscious CARAMEL.
Pour into a container and it will harden into a buttery, spicy lightly tomatoey flavored candy, perfect for a person who wants a different kind of treat. Cover balls of it in white chocolate.
