Almost Zero Carb Cake
2 eggs, Room temp
1/2 cup Powdered Erythritol
1 t Vanilla (or try Banana extract)
1 T Konjac Flour
1 T Wheat Gluten
2 Dashes Cream of Tartar
1 t Baking Powder
2 T Melted Butter. cooled
1/2 cup Powdered Erythritol

Preheat the oven to 350oF
Coat the bottom and sides of a tall pan with parchment like shown
Mix the Konjac, Gluten and Baking Powder in a small bowl.
Combine the Eggs and Erythritol, Vanilla and Cream of Tartar in a stand mixer and let it beat until 4 xs in volume and very light yellow, around 10 minutes.
Slowly spoon in the Konjac/Gluten mixture while the stand mixer is still going.
Stop the mixer.
Fold the butter in gently and pour into the prepared pan.
Bake 30 mins
Remove from pan, let cool and serve with whipped cream and melted sugar free ChocoRite chocolate drizzle.
