Extinct Cuisine: Weavers Chicken Croquettes
 
1 Rotisserie Chicken
1 carrot
1/2 a small onion chopped 
3 cups chicken broth
1/4 cup flour
1/3 cup Wondra Flour
1/2 stick butter
1/3 to 1/2 cup breadcrumbs (it depends if you want firm or soft)
1 family pack Chicken Shake N Bake

 

Remove the meat from the chicken and set aside, put the broth in a pot and add the carcass and skin and boil 20-30 minutes, adding more water as it boils off. Then strain the broth into a bowl and discard the bones.

Put the chicken, carrot and onion in the pot and add 1-1/2 cups of the rich broth and boil it again for 15 minutes, adding extra water only once. 

Puree the chicken with broth and veg in a Vitamix until smooth.

Add the butter and 1/4 cup flour to the pot and let it bubble and foam and then add 1/2 cup of rich broth and whisk till smooth and thickened, add the chicken puree and the Wondra and breadcrumbs and cook till thick. Stirring a lot.

Pour that mixture into a bowl, cover and refrigerate till firm.

Put a pot of oil on the stove on medium.

Put 2 bowls out, put 1/3 cup flour and 1/2 cup water in one and  the shake n bake in the 2nd.

Make balls out of the chicken mixture and roll in the flour mixture, then in the Shake N Bake, then fry till golden.

Thicken the remaining broth with cornstarch or roux and serve with a veggie and the croquettes.
