Foraging #11 Jack By The Hedge Pesto


Jack of the Hedge is wild Garlic Mustard. Its plentiful and you can find it everywhere.
This is what it looks like


It tastes like garlic, so you do not need to use garlic in this Pesto


2 cups fresh picked, washed Jack Of The Hedge (leaves only)
1 cup roasted pecan butter
1/2 cup Parmesan
2 T lemon juice (optional)
1 t salt
Pepper if wanted


Buzz it all together in a Vitamix, adding Olive oil if its too thick, serve over pasta
