Vegan Moussaka



I posted this before but its so good it deserves its own post.
Vegan Moussaka


VEGETARIAN/VEGAN INSTRUCTIONS


1 Eggplant, Sliced and grilled
1 Recipe Vegan Meat
1 (14 oz) can crushed Tomatoes
1/2 a chopped Onion
2 cloves Garlic chopped
1 T sugar
1 t cinnamon
1 T fresh chopped parsley
2 T olive oil
Salt and Pepper

Preheat oven to 350oF
Spray a square pan with Pam

Fry the onion in the olive oil until lightly browned, add the garlic and fry till fragrant. Add the tomatoes, parsley, cinnamon and sugar and cook till it all comes together. Stir in the Vegan Meat, and cook till hot.

Turn off heat, spoon a little bit of the meat mixture onto the pan, Layer on the grilled eggplant slices, then spoon on the vegan meat mixture, top with a layer of 
 
 
 
1 (1.8 oz) Bag Herrs Waffle Fried Potato Chips (lowers the carbs but keeps it authentic)

Vegan Sauce

3 cups Soy Milk
1 T Nutritional Yeast --Simulates Cheesiness
1 T Besan (Chick Pea Flour) -- Simulates egg yolk
1 t Black Salt -- Simulates eggs flavor
1/2 t lemon zest
1 t salt
1/2 t pepper
dash nutmeg
 
Place all in a shaker jar and shake until smooth
 
1/3 cup Flour
1/4 cup Margarine, Melted

Melt the margarine and flour over medium until it bubbles, pour the soymilk mixture in and whisk it until its thick
Taste and adjust the seasonings.

Pour over top of the potato chip layer, sprinkle with more nutritional yeast and a bit of chopped parsley.

Bake until hot and bubbly, about 30 minutes
