Candied Pumpkin



The Pumpkin slices are infused with the spices and sugar becoming a delightful translucent nibble

Candied Pumpkin

1 small cooking pumpkin, top and bottom sliced off, deseeded and degunked, quartered, sliced in 1/2 inch slices DO NOT PEEL
3 cups sugar
3/4 cup water
3 T lemon juice
1 t Pumpkin Pie Spice
1 cup apple cider

Sanding Sugar optional


Put the sugar, water, lemon juice and spice in a pot and bring it to a boil add the Pumpkin, cover, let boil 20 mins, turn off heat, keep covered and let sit overnight.

Remove the pumpkin slices with a slotted spoon and set aside add 1 cup apple cider, turn the heat to high and let it come to a full rolling boil for 5 mins, Add the pumpkin, reduce it to medium-low and cook until the syrup is thickened, Turn off the heat and let cool in the syrup before refrigerating. 
If you want you can drain a few slices and dredge in sanding sugar
