Guacamole Bread






Guacamole Bread

1 pack Martha White Corn Bread & Muffin mix (the one w/o sugar)
4 ounces (1/2 cup) ripe Avocado, mashed thoroughly
2 T lime zest
1 egg
1 small tomato chopped
2 T pickled jalapenos, chopped
the juice of 2 limes
1/2 t salt
1/4 t black pepper

Pre-heat the oven to 425 f
Grease a pan of your choice.

Mash the avocado, zest and lime juice thoroughly, add the egg, salt and pepper. mix till smooth, add the cornbread mix....Mix thoroughly... Fold in the tomato and jalapeno and then spread into the pan.
Bake for 25 mins.

Cool slice and serve with a bit of crema on top
