Confetti Salsa





Confetti Salsa


1 bell pepper of each of the following colors, chopped fine:
red
green
yellow
orange
purple/black
white
(if you can find any, burgundy can also be used)
1 lrg. vidalia onion chopped very fine
3 lrg cloves garlic pressed
1 can green giant niblets
1/2 -to- 2 teaspoons chopped jalapenos ( to your heat liking)
1 package Pomi chopped tomatoes
1/3 cup ketchup
1/4 cup fresh chopped cilantro
1/4 cup Vinegar
salt and pepper to taste ( i usually use 1 tablespoon salt)



put it all together in a big tupperware container, chill overnight,
adjust the seasonings the next day! enjoy!

idea: next time you have leftover rice ,mix in some salsa and bake
excellent fresh tasting mexican rice! 
Or eat as a salad all on its own 
Or put 1/2 cup into a bowl of V8! INSTANT Gazpacho
