Preesi's World Famous Meatball Soup






Preesi's World Famous Meatball Soup

(If you don't have the IKEA meatballs do not bother, Ikeas meatballs make this whole soup. Most meatballs
are Italian and would overpower it!)

3 cups IKEA (yes the Swedish furniture co.) Swedish meatballs
1 box beef broth
1 uht box Parmalat chopped tomatoes
2 cups cooked alphabet pasta
1/3 cup each, chopped: onion, carrot, green and yellow bell pepper
salt and fg pepper
1/4 to 1/3 cup ketchup
3 T olive oil

Heat the oil in a large pot on the stove, add the chopped veggies, season, cook til soft and a lil brown, add the meatballs and stir occasionally til, hhmm... lets say til they take on a lil color and render some of their fat then still cook some more. Add the chopped tomatoes and cook about 5 minutes, stirring constantly, add the broth, season more, add the ketchup, and simmer about 15 minutes until the meatballs are hot and give up alot of flavor and the soup is slightly reduced. turn off heat taste, it should be beefy, slightly sweet and perfect. add the pasta and serve with a sprinkling of Parmesan. enjoy.
