Banh Da Lon

Banh Da Lon is a chewy coconut pandan flavored tapioca cake from Vietnam. If you like Mochi, you will love this

Mix the following till smooth


BATTER #1
1-1/2 cups Tapioca Starch
1/2 cup Mochiko flour
1 heaping cup of sugar
1 can coconut milk
3/4th cup water

BATTER #2
Soak 1 cup yellow mung beans in water for 3 hours
Drain and put in a microwavable bowl and cover with water and boil for 15 mins on high.
Drain and process till smooth let it cool till warm.

Divide BATTER #1 in half into 2 bowls, in one add green food coloring and McCormicks BUCO (Coconut) Pandan extract...In the other mix in the mung beans and yellow food coloring...


Now put it all together...

Spray a deep dish or bowl with cooking spray, set up a big pot with a steamer basket or a metal steamer pot. When it boils, place the bowl inside the steamer and pour in some of the Green Batter. Cover with a dish towl then the pot lid, let it steam for 5 mins, then pour on some of the yellow batter, let steam for 5 mins, pour on more green batter and steam for 15 mins...

You can make the layers as thin or thick as you want......

Carefully remove the dish from the steamer and let cool before peeling it out of the bowl and slicing and eating...

This makes 1 large multi layered cake or 2 small...

Eat with tea...
