Vegan Pigs Ears Lao Jellied Pork Ears (ຫູໝູເຢັນ == Hoo Moo Yen)

 


 With Ssamjang (not Laotian, but I didnt wanna make the Vegan Jeow Som

So good!

 Vegan Pigs Ears Lao Jellied Pork Ears (ຫູໝູເຢັນ == Hoo Moo Yen)

 

1/2 bag shredded, WHITE BACK BLACK FUNGUS
Cilantro Stems and roots (washed) from a bunch.
1 T vegan chicken stock powder
1 t yeast extract
Quart and a half of Water

Put the Stock powder, yeast and cilantro stems in the water and simmer about 5 mins.

Let cool completely, strain the broth back into the pot and add the Fungus and let hydrate, 20+ mins

1 packet of Konjac Powder
1/2 t MSG
1 t Black Pepper
1 bunch Cilantro tops chopped
1 bunch scallion whites, fine chop
 
 Mix the pepper, msg with the Konjac, then whisk into the broth and fungus
 
Boil this mixture for 10 minutes then add

1 bunch Cilantro tops chopped
1 bunch scallion whites, fine chop

Then put the pot on the fire and then add scallions and cilantro cook 4 minutes 

Pour into a mold and chill.




To eat, slice and eat in lettuce leaves with rice and Vegan Jeow Som Dipping Sauce or Ssamjang
