Buttery and Rich
Ritz Cracker Crepes
2 eggs
1-1/4 cup milk
2 T butter
1/2 cup flour
25 Ritz Crackers, pulverized (Whole Wheat preferred)
1 T sugar
Put everything in a Blender/Vitamix and blend till smooth.
Spray a medium pan with butter flavored spray or a half a pat of butter.
Pour a ladleful of batter into the pan, and swirl to spread the batter .
Flip the crepe carefully when it gets dry and whispy around the edge and gets golden. Then cook about 10-15 secs and put it on a plate and repeat with the rest of batter.
They are so good all by themselves with butter and a little sugar.
