Spicy Cake with Saffron, Jalapeno and Fruit
Cake
Note: Read topping instructions first
1-1/2 sticks butter
2 cups flour
1 t salt
2 t baking powder
2 cups flour

2/3 cup sugar
4 eggs
1/2 cup milk plus 3 T
1 t vanilla
1 t Saffron
4 eggs
1/2 cup milk plus 3 T
1 t vanilla
1 t Saffron
Heat up the milk, add the saffron and set aside...
Preheat the oven to 350F
Grease and flour a 9x13 cake pan.
Whisk the Flour, salt and baking powder together.
Cream the butter, vanilla and sugar together then beat in the eggs
Add the cooled milk
Then add the flour mixture, mix thoroughly
Pour in the pan
Topping
4 Cups Mixed dried fruit, make it colorful!*
NO CITRON. (Soaked in orange juice for a few hours)
1 cup Jalapeno Jam (Or 1 cup Pineapple Jam, mixed with 1/3 cup Chopped Sweet Pickled Jalapeno)
1 cup mixed roasted nuts. (optional)
Drain the fruit and mix with the Nuts and Jalapeno Jam
Pour this over the cake
Bake for 45 mins to 1 hour
Slice, serve with unsweetened whipped cream
* I used, Multi Color Cherries, Apricots, Kiwi, Strawberries, Pineapple, Blueberries, Indian Wintermelon
