Turkish Eggs Salad
8 Hard boiled eggs, chopped
1/3 cup Fried Garlic
1/3 cup Greek Yogurt
Paprika Butter Mayo
3/4 cup Melted butter, cooled
1/4 cup Corn Oil
3 T Paprika
1/4 cup dried whole eggs
Sprinkle of onion powder
3 T water
1 T vinegar
2 T lemon juice
Salt and Pepper
Mix the butter while still hot with the paprika stir thoroughly then add the oil and mix in a bowl till just warm
Put the dried egg, water, onion powder, vinegar, lemon juice and salt and pepper in the cup of an immersion blender and put the immersion blender in it and turn on to mix the egg completely, slowly add the paprika butter and agitate it till its thick.
Put the Eggs, Garlic and Yogurt in a bowl and mix, then add some of the Mayo to taste.
