British $%/?!@. With Onion Gravy

1 box sage stuffing mix
1 lb diced fatty pork
1/2 lb liver
1/2 t mace
2 cups boiling water

Preheat the oven to 350oF
Spray a 9X13 roasting pan with oil

Pour the stuffing mix into a bowl add the water and stir.
Meanwhile, grind the pork and liver and mace in a Vitamix
then add it to the stuffing and make 24 "balls"

2 onions
oil
2 T sugar
1 T red wine vinegar
6 T flour
6 T butter
6 cups beef stock
chopped parsley
 
Fry the onions in the oil, till browned, add the sugar, stir a bit more.  Add the vinegar.
In another pan, fry the flour with the butter until it bubbles,whisk in the stock, and add the onions
When it is hot bubbly and thick pour over the "balls" cover and bake 1 hour.
Serve with mashed taters and parsley
