Vegan Shrimp Ceviche


Little vegan shrimps, with the correct texture and flavor and crisp veggies and zesty citrus dressing.

 Vegan Shrimp Ceviche
 
First, Lets make the vegan shrimp
 
Flavoring Agent- DO NOT OMIT ANYTHING!
 
5 Sheets kombu
2 sleeves kombu powder
3 T finely crushed Fritos (Yes, Fritos!)
1 t salt
3 cups boiling water

Put all the ingredients in a bowl and pour over the water. Let steep overnight in the fridge. Strain thru coffee filters. You will have 1-1/2 cup liquid (-/+) If you have more put it in the fridge.
Chill

Mix a few drops orange food color and a few drops red color into 1/4 cup plain soymilk, set aside

2 cups Soy Milk
 
Put the Konjac powder and soymilk in a blender and blend, Then add 1-1/2 cup of the broth
Pour into a pot and bring to a boil and boil 3 full minutes, stirring frequently with a whisk to break up lumps. It will first be lumpy then get thinned out. when the timer hits 30 seconds stir and swirl in the colored soymilk Pour into a plastic container or silicone shrimp molds
Let chill till completely firm.   
When its firm, cut into shrimp shapes

Lets make Ceviche. Put all of these veggies in a bowl
 
1 Cucumber diced
1 red onion diced
1/2 cup cilantro chopped
1 Tomato chopped
1 cup sweet corn
1 chopped red chilis
 
Toss in the Vegan Shrimp, Then dress with the following
 
1/4 cup lime juice
1/4 cup Orange Juice
1/4 cup EVOO
salt 
pepper
 
Serve and enjoy
