British Fishcake Casserole

 

 


 Great way to get kids to eat more fish!

 British Fishcake Casserole

 

1/4 a stick butter
1 small onion chopped
Salmon fillet
Cod or Flounder fillet
1 cup white wine
8 Scallions, finely chopped
2 mashed potatoes
Parsley
olive oil 
Salt and Pepper
Cheddar cheese

Make sure the fish fillets are equal size

Preheat the oven to 375oF

Grease a shallow baking dish then add the fishes.

Season with the wine, salt and pepper and the onion and cover and bake 20 mins.

Fry the scallions in the butter and then flake up both fishes, and mix with the parsley and mashed potato.  

Place this mixture in the buttered dish and bake 15 mins on 350oF

Remove top with the cheese and place back in the oven till bubbly.

Serve
