Salmorejo With Egg And Boquerones

1 Fourteen Ounce Can of Diced Tomatoes
2 inch chunk of Italian bread
2 Garlic cloves
Splash of red wine vinegar
1/3rd cup Extra Virgin Olive Oil
Hot sauce (optional)
Salt

 Put the garlic, tomatoes, vinegar, salt and half the bread in the Vitamix, turn it on, then slowly alternate between the Oil and little chunks of bread until the color of the soup changes to orange and has emulsified. Chill.

Serve in bowls with hard boiled eggs and Boquerones.

Boquerones are marinated white anchovies. They ARE NOT the anchovies in the can that you eat in pizza or Cesar Salad, they are more like pickled herring without the salt and sugar and onions. 
They are expensive and addictive.
