Tastes great with Ham or Pork
Maraschino Cherry Ketchup
6-7 12 oz jars Maraschino Cherries, drained, 1 cup juice retained
2 cloves garlic, peeled and roughly chopped
1/2 small Vidalia, peeled and roughly chopped
1 red chili,
½ cup vinegar
½ t ground allspice
½ t ground ginger
½ t ground nutmeg
½ t ground coriander
½ t black pepper
1 T salt
1 T fish sauce
½ cup vinegar

Pour the cherries, Vinegar, Onion, Chili and Garlic into a Vitamix and puree
Pour into a pot and add the Spices, Salt and Fish Sauce
and simmer till thickened
