Very Low Carb Jimami Dofu (Peanut Tofu)


Soooo creamy and delicious. Im hooked! If you love Peanut Sauce, you will love this.
Very Low Carb Jimami Dofu (Peanut Tofu)

200 gms RAW peanuts (skinless)
Hot water

Soak the peanuts in a bowl covered with hot water.
In an hour, drain. then put them in a Vitamix or blender with 

3-1/2 cups water
a dash salt

 and run on high for a minute.
 Pour into 


and let it all drain into the bowl at the bottom, 

Pour the white liquid back into the Vitamix with

1-1/2 teaspoons PLAIN Konnyaku Powder

And blend on high again for a minute, them pour into a pot and whisk constantly on high till it thickens and CONTINUOUSLY BOILS for 2 mins. 

Wet a plastic bowl and pour the mixture in, cover and chill till firm...

Serve with this sauce and fresh grated ginger

1/4 cup Dashi stock
2 T Soy Sauce or Tamari
2 T Sake
1 T Truvia  or Erythritol
