Very Low Carb Jimami Dofu (Peanut Tofu)
200 gms RAW peanuts (skinless)
Hot water
Soak the peanuts in a bowl covered with hot water.
In an hour, drain. then put them in a Vitamix or blender with
3-1/2 cups water
a dash salt
and run on high for a minute.
Pour into
and let it all drain into the bowl at the bottom,
Pour the white liquid back into the Vitamix with
1-1/2 teaspoons PLAIN Konnyaku Powder
And
blend on high again for a minute, them pour into a pot and whisk
constantly on high till it thickens and CONTINUOUSLY BOILS for 2 mins.
Wet a plastic bowl and pour the mixture in, cover and chill till firm...
Serve with this sauce and fresh grated ginger
1/4 cup Dashi stock
2 T Soy Sauce or Tamari
2 T Sake
1 T Truvia or Erythritol
