Rich buttery beef marrow, spread on toast with a zesty parsley lemon salad. What could be more Old Timey and Simple than that?
Old Timey Food: Marrow Bones
Preheat oven to 450oF
8 Marrow Bones, sprinkled with salt and pepper
8 Scallion "ribbons", wilted in the microwave for 1 min. (Optional)
Tie a scallion ribbon around each bone and place spaced out on a cookie sheet
and bake in the oven for 15-20 mins taking care to not let the marrow completely melt.
Pull out and serve with the salad below, spread on toast points with a marrow spoon or with the spoon side of an OXO Seafood Pick
Parsley Salad:
1/2 bunch parsley, washed
1 T Capers Drained
2 T lemon juce
1/4 t Lemon Zest
1 Large shallot
Pulse in a processor till chunky
Just before serving stir in
2 T Thai fried Shallots (for crunch, optional)
