Muffaletta Olive Salad Mix & Sandwich




 
I prefer the Boscolli Olive Salad, but I could only get a giant jar from Amazon, and quite frankly the brand I can get at the store (Giuliano) is NASTY. So here's a way to make your own ... simply.
Muffaletta Olive Salad Mix & Sandwich 

1 small jar spanish olives
1 jar pitted Kalamata olives
1 medium jar Giardiniera mix (I prefer Aldi's Tuscan Harvest brand)
Extra Virgin Olive Oil

If you have the Aldi brand Giardiniera, set it aside (it is chopped enough), but if you have another brand then place a large strainer over a bowl and dump all the jars into it. Place the olives and Giardiniera mix in a food processor and pulse, until all the pieces are medium-small. Get a Tupperware container and pour this mixture into it. add the brine in the bowl and top off with extra olive oil. put the top on the container and shake it up to combine.
Eat in salads or the following sandwich...

Muffaletta Sandwich

Olive Salad
Round Foccacia
Ham
Provolone
Salami
Mayo

Cut the bread sideways, spread the bottom half with mayo and layer on the provolone, ham and salami. Spread on a liberal layer of olive salad and put the top on.
Slice and eat.
