Mostly Keto Almond Cherry Torrone

1 Bag dried cherries (Mariani brand preferred)
1 cup whole fresh roasted almonds (pick thru them and remove any gross ones)
 1/4 t Cherry Candy Flavoring
1/4 cup Dried Eggwhite
1/2 t Cream of Tartar
1/4 cup Water
1 T water
2 T Allulose
2 cups Allulose
2 T Sugar Free Honey

Nougat Wafer Paper

Pour the candy flavoring into the bag of cherries, and Ziploc it closed and massage the flavoring into the cherries, let sit for 2-3 days.

Mix the Eggwhite, 2 T of Allulose in a bowl, Cream of Tartar, add 1/4 cup of cold water and whip in a stand mixer until STIFF

Put the allulose and honey and 2 T of water in a pot on high and simmer till it reaches 350oF,

Turn the stand mixer on again and drizzle the syrup in slowly on high, when its all in, let it go for 10 minutes scrapping the sides occasionally until it is very thick and gets caught up in the beaters. Turn it off and add the cherries and almonds and stir till combined and....

Place one sheet of nougat paper in a small pan.
"Pour" or Spoon the mixture onto the nougat paper and press flat with a spoon, then lay another sheet of nougat paper on top.
Then put a weight like a box on top
Let settle overnight then slice.
