The BEST Vegan Egg Salad That Has The Right Texture


1 block silken tofu
1 cup water
1 packet Konjac powder
1 t Salt
1/2 to 1 t Black salt
1/4 cup Maltodextrin

Puree the tofu in a blender

Mix the salt, black salt, konjac powder and maltodextrin in a medium pot.
Add the Water then tofu, then bring to a boil for 3 minutes, stirring constantly
Pour into a plastic bowl which was rinsed in water.
Refrigerate until solid.

Take out, chop medium fine then mix with YOUR mix of the following

vegan mayo
yellow mustard
Chopped celery
Grated onion
relish
Hot sauce
salt and pepper
Black salt

Serve
