Spicy Stinky Mouth Quiche With Fritos Lemon Pepper Crust


This quiche highlights and elevates Ramps and the pepper jack makes things interesting

Spicy Stinky Mouth Quiche With Fritos Lemon Pepper Crust


1 cup flour
9-1/2 oz bag Fritos
1/2 stick butter
1/2 t Black pepper
1 t Tones Lemon Pepper

Mix up, pat into a pie plate pan, set aside

Preheat the oven to 375oF

2 cups, washed, chopped ramps (tops and bottoms separated)
4 eggs
2 cups shredded Pepper Jack
1 cup half and half
Salt and pepper

Saute the ramp bottoms in a little oil till tender, add the tops and toss with oil, cover and set on back burner (with it turned OFF) for 10 mins to wilt.

Mix the eggs, cheese and half and half and a few shakes of salt and pepper and then add the Ramps and then pour into the crust cover loosely with foil and bake 30 mins then take off the foil and let it puff and brown (about 15 mins)
 Let it sit outside the oven about 10 minutes then serve
 
Serve with breath mints
