Roast Chicken With A Balsamic Honey Mustard Glaze
1 Chicken quartered, skin removed, pricked all over
or 6-8 boneless skinless chicken breasts and thighs
1/4 cup honey
1/4 cup balsamic vinegar
1/3 cup any mustard
4 cups chicken stock
1 large onion chopped fine
3 cloves or more garlic pressed
salt & FG pepper
Saute the onion in some oil in a large pot, when it starts getting some color, add the garlic, season with salt and pepper, add the chicken and fry until golden on all sides, add the stock, season more, in a small bowl mix the honey, vinegar and the mustard till smooth, add to chicken and simmer on one side 10 minutes, turn, simmer 10 minutes more, remove to a roasting pan and place in a 350 f degree oven.
Reduce the glaze to the consistency of gravy, baste the chicken often and much! Roast 50 minutes!
