 Deluxe Mushroom Soup

 Lets make the Mushrooms and Onions

Meaty Mushrooms & Onions
 
2 large (24 oz) packages of whole or sliced Mushrooms (white or baby bella)
1 bag frozen Pearl Onions Thawed
1/4 cup Olive Oil
1/4 cup butter, melted
Salt and Pepper
3 T Lemon Juice Or 1 t True Lemon powder (do not OMIT)

Cut the whole mushrooms in 4ths, the medium ones in half and leave the smalls whole. Put them in a 9x13 pan with the onions, mix the oil and butter together and toss the mushrooms, coating completely, Season, roast in a 350F oven til they are dark, and caramelized, about 1 hour. Add the lemon, toss, roast 5 more minutes.

Lets Make Cream Of Mushroom Soup

The above Mushrooms and Onions
2 cups whole milk
2 cups chicken broth
4 T butter
4 T flour
Salt and Pepper 

Melt the butter in a pot on medium, add the flour and let it bubble, whisk in the milk and broth and bring to the simmer and add the mushrooms and onions and simmer about 3-5 mins
