Lets make the Mushrooms and Onions
Meaty Mushrooms & Onions
2 large (24 oz) packages of whole or sliced Mushrooms (white or baby bella)
1 bag frozen Pearl Onions Thawed
1/4 cup Olive Oil
1/4 cup butter, melted
Salt and Pepper
3 T Lemon Juice Or 1 t True Lemon powder (do not OMIT)
Cut the whole mushrooms in 4ths, the medium ones in half and leave the smalls whole. Put them in a 9x13 pan with the onions, mix the oil and butter together and toss the mushrooms, coating completely, Season, roast in a 350F oven til they are dark, and caramelized, about 1 hour. Add the lemon, toss, roast 5 more minutes.

Lets make it.
Put some rice in the rice cooker, then gather up these ingredients
The breast Meat of 1 Rotisserie Chicken, diced
1/2 recipe of the mushrooms above.
1/3rd Red and Green peppers, diced
1/3 cup chopped sweet onion
Saute the onions and peppers in oil on medium until translucent. Add the Mushrooms and Chicken to heat thru, Set aside.
2 T Flour
2 T Butter
1 cup half and half
1 cup chicken stock
2 T Sherry
Salt and Pepper
Melt the butter in a pot, and add the flour and stir till it bubbles, add the sherry till it boilsm then the half and half and chicken stock, let it simmer till thickened, then add the veggies and chicken and simmer till hot and bubbly.
Serve over rice or with buttered toast points.
