Indian Inspired Superfood Ginger Bread (Eggless)



Superfood Ginger Bread

Superfood Puree

3 oz Fresh Peeled Turmeric
3 oz Fresh Peeled White Turmeric (Amba Haldi)
8 oz or more Fresh Peeled Ginger

Puree all in a Vitamix

While still in the Vitamix add

1 stick softened.Butter
1 cup jaggery, ground, (Indian Sugar)
1/2 cup milk,

Whisk the following together

3 t. baking powder
2-1/2 cups whole wheat flour
1 t cinnamon
1 t ground cardamom

Preheat an oven to 350oF

Grease a square pan

Mix the puree and the dry together, then pour into the pan, and bake 30-40 mins, or until a skewer inserted in the center comes out clean
Serve with whipped cream and pistachios
