Spicy, Tangy with just enough Sweetness

Chunky Spicy Pineapple BBQ Sauce

1 large onion
5 washed, seeded Jalapenos
1 (12 Oz) jar Mount Olive Hot Banana Pepper rings
1/2 cup Guldens mustard
1 can Comstock Pineapple Pie Filling or 2 jars Smuckers Pineapple Ice Cream Topping
Chop the onion and saute on medium in butter and olive oil till transluscent and then caramelized
Put the entire jar of peppers with brine and the jalapenoes in a food processor and pulse till chunky-fine.
Pour this mixture into the onions then cook on medium for 6-7 minutes, stirring occasionally.
Add the mustard and stir and good 2-3 more mins. Let cool till warm and stir in the pie filling.

Serve on pork, chicken or stir into pulled pork and make a sandwich!
Serve with Plaintain Chips
