Tuna Or Salmon Scrapple
Spray a small loaf pan with Pam
Before pureeing the tuna in a Vitamix, Pulverize 1 cup Oatmeal, set aside in a bowl
Then puree all of the following
2 Cups drained canned Tuna or Salmon
1/3 cup boiling water
1/2 t salt
1/2 t Dill
1/2 t Old Bay
1/2 t Seafood Seasoning
1 t sugar
1 t dried onion flakes
1 t dried garlic
Set aside
Then
Put 2 cups water
the pulverized oatmeal
3/4 cup ground cornmeal
1/2 cup butter
in a pot over high heat and whisk till its thickened, add the tuna mixture and cook abut 2 mins more.
Pour into the loaf pan and cover, refrigerate till firm.
Cut into slices and fry in oil in a hot non stick skillet, till crispy on the outside.
Serve with crispy rice cakes and bottled Teriyaki
