Healthier Filipino Sisig

Reduce the fat and up the protein by replacing the pork belly with pork shoulder/butt
Healthier Filipino Sisig 

 

1 Four lb Pork Butt
Large tub of Lard
Salt and Pepper

Cut the butt up into 1-1/2 chunks and season with s&p

Place the chunks in a dutch oven and cover with melted lard to completely cover. Bake at 250F for 5 hours. Strain out the chunks and let cool to room temp. Then put in a bag and freeze

(Cooking it this way doesnt increase the fat)

2 cups Red Hot Chilis, finely chopped
6 Green Bell Peppers finely chopped
2 Red Onions chopped

Put these all in a plastic bag and freeze

When you want Sisig, pull out the bags and take the portions you want to eat.

Thaw some of the pork out and then deep fry it till crispy (10 mins), then chop it up

Then fry the veggies in a knob of butter, add the pork and then

For each serving

1 t Black Pepper
1 T Oyster Sauce
1 T Soy sauce
1 T Mayo

Stir completely, then serve in a dish with 

Calimansi Juice
