Aussie Musk Flavored Lamingtons






 Aussie Musk Flavored Lamingtons

Make the Musk Jam

2 cans sugarfree Polar brand Lychees with juice, pureed
1/4 t red/pink color
2 cup sugar
2 T Sure Gel Yellow Box Pectin
1/2 t musk flavoring

 Cook this all in a pot until thick and reduced. Chill 

Bake a white or yellow box cake in a square pan

Musk Icing

    80g or 6 Tablespoons butter , melted
   1 cup or 250ml milk
3-1/4 cups or 400g icing sugar
 1/2 cup 50g milk powder
musk flavor, to taste
red color to make pink

   A bag of desiccated coconut

Flatten the top of the cake. Cut the cake in half, then make one half into two layers, spread with some Musk Jam, put top upside down and make a sandwich.



 

Cut both halves in cubes (10 cubes each half)

Put all of the Icing ingredients in a blender and blend until smooth.

Pour into a bowl

Pour Coconut into another bowl

 



Put a cooling rack on the work area and dip each cube into the icing and then the coconut and place on cooling rack to dry. 

Refrigerate for an hour to set, Serve
