Pickled Chicken Salad

 

A delicious chicken salad with a creamy pickle flavor
 
Pickled Chicken Salad
 
2 Giant Aldi Chicken Breasts
Water
2 T Pickle Powder
 
Score the chicken on one side and  put it in a large pot and cover with water and the pickle powder.
Boil 25 minutes, replacing water as it evaporates
Remove, and chill the chicken

1-2 T Pickle Powder
1/3 cup mayo
1/3 cup sour cream
2 T white vinegar
3 ribs celery, fine chop
1 small onion, minced
2 T sugar
2 chopped hard boiled eggs
Green food color (optional)
 
Mix all the ingredients together in a bowl, except the chicken 

When the chicken is cold, remove from fridge and inspect the chicken and remove any gristle, elasticky  jiggly bits (not fun in a cold salad)
Cut in small dice, then add to the bowl and combine, eat
