Honey Mustard Bacon Cornbread


This made my house smell so good!
Honey Mustard Bacon Cornbread

Grease and flour THIS PAN

Preheat oven to 350oF

2 cups flour 
1 cup ROASTED cornmeal
  3-1/2 t. baking powder
1/2 T Salt

Whisk all of the above together in a bowl

3 eggs
1/3 cup bacon grease
1/3 cup dijon mustard
1/3 cup honey
 1 cup water

Put all of the above in a blender and blend till smooth, Pour into the flour mixture and mix till smooth, then mix in the following
1/3 cup Bookbinders whole grain mustard
 1/3 cup crumbled bacon

Pour evenly into the pan and bake for 30 mins or until toothpick inserted in centers comes out clean

Serve with honey butter

 I thought of brushing the flour residue off, but I felt it gave it a rustic look.

To roast the cornmeal place 2 cups cornmeal in a skillet on high and stir constantly with a wooden spatula till the corn is darker and toasty scented, and smells of  Fritos
