Healthier Filipino Sisig
Cut the butt up into 1-1/2 chunks and season with s&p
Place the chunks in a dutch oven and cover with melted lard to completely cover. Bake at 250F for 5 hours. Strain out the chunks and let cool to room temp. Then put in a bag and freeze
(Cooking it this way doesnt increase the fat)
Put these all in a plastic bag and freeze
When you want Sisig, pull out the bags and take the portions you want to eat.
Thaw some of the pork out and then deep fry it till crispy (10 mins), then chop it up
