Chicken Glazed With A Branston Pickle BBQ Sauce
Assorted Package Of Bone In Chicken Breasts, Thighs and Drumsticks
2 cups Branston Pickle
2 T Ketchup
Chipotle Powder to taste (for heat and smokiness)
2 T vinegar
1/2 t dried garlic
1/2 t dried onion
1/2 cup brown sugar
1 T Yellow Mustard Or Dijon (optional)
Salt and pepper
Puree all the ingredients in a blender and simmer in a pot on medium until thickened
Season the chicken with Salt and Pepper. Fry the chicken skin side down in a frypan with a few tablespoons of oil on high until the skin gets golden and crisp. Place it skin side up on an oiled baking tray in the oven and bake at 350F til cooked, about 25-30 mins. Then dip the chicken in the sauce and place back in the oven and bake (redipping 2 times after) till its sticky and good.
Serve with Yorkshire Puddings and Brussell Sprouts and maybe a Jacket Potato
