Artisanal Goodies #7: Candy Jerk- A Spicy Candied Fruit Salad

Translucent, Spicy, Fruity, and Thick... Over Brie
Candy Jerk- A Spicy Candied Fruit Salad

For at least 17 years Ive had a concept recipe name on the food section of my various websites. I could never get it to "fruition" (no pun intended) in my mind, It got stopped at all levels, It never could get past the interesting name. I also could never order a certain ingredient, and come to find out heating the ingredient kills it. :::sigh::: Oh well, Well, guess what, I made this and it turned out to be delicious as a condiment but its still nothing like the original recipe concept name I had in my mind. So I will put the old name back on my drafts and try another 17 yrs to make it work. lol

Delicious over brie, over cheese and crackers, as a relish on chicken or ham, maybe even over cake or on a bagel.

This was the 5th and final try and its magnificent.

1 can DelMonte Diced Mango
1 can DelMonte Very Cherry fruit cocktail
1 can Dole Tropical Fruit cocktail
DRAIN AND RESERVE ALL JUICES
1 Small Jar Pickled Jalapenos
1/4 cup Franks Hot Sauce
 4 cups sugar
1 cup water
1/4 cup white vinegar

Second Day

1 t Allspice
1/2 t black pepper

Put the sugar, water, Franks & vinegar in a pot and bring it to a boil add the Canned Fruit Salad and Jalapenos, let boil 20 mins, turn off heat, cover and let sit overnight.
Add the reserved canned syrup and the spices, turn the heat to high and let it come to a boil, then reduce it to medium-low and cook until the syrup is thickened, about 10-15 mins. Turn off the heat and let cool in the syrup before refrigerating.

NOTE:
It is key not to boil this till its caramelized, just candied. When it smells like its getting burnt sugary, take off heat immediately.
