Spicy Jerk Chicken And Watermelon Rind Stir-Fry
1 Lb Chicken Breast Cut in strips
1/4 a seedless Watermelon
1 t Salt
1 t White Vinegar

1/4 cup brown sugar
2-4 T Grace Brand Jerk Seasoning
1 minced Scotch bonnet (optional)
Multi Colored Pepper Strips from 3 peppers
1 large Onion, sliced

Peel the watermelon, remove the pink meat, and slice the rind thin.
Put the rind in a bowl and sprinkle with 1 t salt, set aside for an hour.
Toss the chicken with the Jerk Seasoning and fresh thyme and set aside

After an hour rinse the salt off the watermelon rind and saute in oil in a pan until it looks like this
Put some oil in the same pan and saute the chicken on both sides until almost done transfer to a plate.
Saute the onion and peppers and the scotch bonnet, till they get translucent and take on some color, then add the watermelon rind and add the chicken and brown sugar and combine all, cover and cook 3 mins.
Add 1 T rice vinegar and squash the chunks of watermelon meat over top for the juice, discard the pulp. Stir.
