Candied Apple Upside Down Cake
3/4 cup sugar
1 stick butter, softened
2 eggs
1-1/2 cups Flour
2 teaspoons Baking powder
1/2 cup milk
Green Maraschino Cherries
1 Package Concord Candy Apple Coating
2-1/2 cups sugar
Mix the Candy Apple Coating with 2-1/2 cups sugar and place in an air tight container.
Remove 2/3 cup and pour evenly in the bottom of a greased round cake pan. Drain the apple rings, reserving the juice.
Place the rings at the bottom of the round cake pan over the powder, place a green cherry in each hole.
Set aside.
Chop the rest.
Cream the butter and sugar together, then add the eggs, then the milk, set aside
Whisk together the flour and baking powder, then add to the butter/egg mixture. Stir completely.
Spread gentley over the Apple rings
Bake at 350 f for 35 mins
While it bakes reduce the leftover juice in a pot with 1 teaspoon cornstarch, till syrupy, add the chopped remaining apple rings, set aside.
Invert the cake onto a plate, let settle, then remove the pan.
To serve, slice and serve with ice cream or whipped cream, with the juice syrup drizzled over top
