I saw these on Guy Fieris Diners, Drive-Ins and Dives, but there was no recipe so I set out to make them myself...
Basically you just drain, shell and chop
1 entire fresh coconut,
2 chopped hearty sized thumbs of ginger
2 cups brown sugar
1 cup water
Boil it until it turns to candy and spoon onto wax paper or a silpat.
Let cool and eat...
