Vegan Scrapple

Vegan Scrapple! For Vegan Philly!
Vegan Scrapple

Spray a small loaf pan with Pam

Before pureeing the tofu in a Vitamix, Pulverize a HALF cup Oatmeal, set aside in a bowl

Then puree all of the following

1 block Extra Firm Tofu
1 t Marmite
  2 T browning
1/3 cup boiling water
1 t salt
1/2 t dried parsley
1 T sage
1  t black pepper
1 t thyme
Several Dashes red pepper flakes
1/2 t ground coriander
1 t sugar
1 t dried onion flakes
 Set aside
Put 2 cups water
the pulverized oatmeal
3/4 cup ground cornmeal
1/3 cup coconut oil
 in a pot over high heat and whisk till its thickened, add the tofu mixture and cook abut 2 mins more.
Pour into the loaf pan and cover, refrigerate till firm.
Cut into slices and fry in oil in a hot non stick skillet, till crispy on the outside.
Serve with hash browns or toast with grape jelly or ketchup.
