1970's Soybean Meatless Meatloaf
In the 1970's there was some kinda meat shortage and a lot of home cooks were trying to make their meat stretch (LOL) The supermarket we used to go to (Philly's smACME Market) used to sell this kit to make a meatless meatloaf out of soybeans. I used to LOVE it. The soybeans at that time were springy and the meatless meatloaf was moist and delicious.
This is my recreation of that kit, for all you vegetarian Philadelphians who remember that kit at smACME Market.
Place
2 cups roasted dried salted or unsalted soybeans
in a bowl and pour boiling water over them just till covered for a few hours.
Drain completely
Preheat oven to 350oF
Grease a loaf pan.
1/2 chopped onion
1 chopped carrot
1 Chopped celery stalk
1 Chopped celery stalk
1/3 cup ketchup
1 cup Egg Beaters
1 cup Italian Breadcrumbs
1 pack McCormick's Meatloaf seasoning
Pepper
Mix EVERYTHING together thoroughly and pour into the pan.
Bake for 1 hour
Cool slightly, slice and serve, with MORE ketchup.
Notes:
If you want, cover with more ketchup and strips of vegetarian bacon
