Candied Salsa and Candied Fennel Bulbs (with syrup)
The taste is similar to my Candied Jerk
If you lightly candy Fennel Bulbs with lemon juice you get a glorious smell in your kitchen and the syrup and resulting slices of Fennel are akin to candied Angelica....
BUT
Candied Sauerkraut Relish
1 bag of Sauerkraut (and brine)
1 bag Dried Apples (do not use fresh apples)
1/2 a large sweet onion rough chopped
1 T Coarsely ground Caraway Seeds
1 chopped red hot pepper
4 cups sugar
1/3 cup white vinegar
1/2 cup whole grain mustard
1/3 cup white vinegar
1/2 cup whole grain mustard
1 T salt
Pepper
Bring the above to a boil over high heat , then reduce to medium and let boil 20 minutes.
Cover, then let sit 24 hours
for 3 days, every 24 hours add 1 more cup sugar, let boil on medium for 5 minutes, cover then let sit 24 hours.
At the end, pour into a sterilized jar, cool and then refrigerate,
Serve over meats and cheeses
