Harvest Pasta Salad






Harvest Pasta Salad




1 to 1/2 package Goya Pumpkin Pasta, or other Halloween or Harvest shaped Pasta

Cook and drain the pasta per package directions for al dente

1 small Butternut Squash, peeled seeded & Cubed
2 Washed, cored & Cubed Apples (not peeled)
1 small Chopped red onion
generous drizzling of Olive oil

 Toss all the above with the olive oil and pour onto a baking sheet and roast in a 375 f oven till tender but not falling apart and brown on the edges. Remove to a large bowl with the pasta

Toss in

1/3 cup Toasted Pecans
1/3 cup Craisins
1 cup Large diced Boars Head Golden Classic Deli Chicken, saute it in a pan to take off the coldness
3 handfuls Baby Spinach leaves 

Drizzle it all with more Extra Virgin olive oil. It doesnt need any other dressing, its packed with so much flavor as it is..if you want extra sweetness add some maple syrup too
